RECIPE:
Crazy for rhubarb
Ingredients:
275 g chopped rhubarb
25g – 50g of sugar, depending on taste
1/8th teaspoon of almond essence
2 tablespoons of Saint-Germain elderflower liqueur
200 ml fresh cream
Toasted almonds and small biscuits to serve (optional)
Method:
1/ Put the chopped rhubarb, sugar and almond essence in a small saucepan over low heat. Cook for 15 to 20 minutes, until the rhubarb has softened. Let cool.
2/ Whip the cream until it begins to rise, then add the elderflower liqueur and whisk again to incorporate it.
3/ Incorporate the cooled rhubarb into the cream and pour it into glasses. Refrigerate for at least an hour, then serve with toasted flaked almonds sprinkled on top and small amaretti biscuits served on the side.
