Just egg, basil, tomatoes, watermelon, pineapple, with whole wheat porridge bread

Monday — Lunch
Sweetgreen Leisure!
Kale, arugula, potato, mushrooms, apples, almonds with whole wheat bread. Dressing: Dijon mustard, olive oil, balsamic vinegar, lemon juice, salt and pepper

Monday — Snack
Dark chocolate coconut water

Monday — Dinner
Banza Penne pasta, RAO's homemade marinara, with fresh basil and cherry tomatoes

Tuesday — Breakfast

Wild blueberries, TBSP hemp seeds, TBSP chia seeds, homemade almond milk (the original recipe uses a tablespoon of omega seed butter but I replaced it with almond butter)

Tuesday — Snack

Roasted butternut squash, carrots, onions, potatoes, with rosemary, salt and pepper at 350 for 25 min. With vegan salmon (I don't really recommend it, I didn't really like it. Personally, I would have preferred grilled tempeh).
