Paloma 3 Ways – Classic, improved and clarified!
Celebrating Paloma de Patrón Week (December 1st to 8th) with some Palomas ranging from simple to complex! Start with an easy-to-make classic Paloma with Patrón Reposado and CAPI Grapefruit Soda before moving on to two unique variations. The first of the variants is known as the Improved Paloma which is made with a homemade salted grapefruit cordial and a touch of Campari and the second is the Clarified Paloma which calls for curdling and clarification with creamy coconut milk.

INGREDIENTS

CLASSIC PALOMA
– 45 ml Patrón Reposado tequila (1.5 oz)
– 100 ml grapefruit soda (3.5 oz) – https://youtu.be/hidCakz3yB0
– 7.5 ml – 15 ml lime juice, optional (0.25 – 0.5 oz)
– Salt (pinch or edge), optional

IMPROVED PALOMA (by ZAC OVERMAN)

Salted grapefruit cordial:
– Zest of 1 ruby red grapefruit
– 1 cup of sugar
– ½ cup ruby red grapefruit juice
– ¼ cup lime juice
– ¼ cup of water
– 1 ½ teaspoons of salt flakes

Improved Paloma
– 60 ml of Patrón Reposado tequila (2 oz)
– 30 ml salted grapefruit syrup (1 oz)
– 22.5 ml lime juice (0.75 oz)
– 15 ml of Campari (0.5 oz)
– Carbonated water

CLARIFIED PALOMA
– 45 ml Patrón Reposado tequila (1.5 oz)
– 15 ml of Ancho Reyes Chilean liqueur (0.5 oz)
– 15 ml of Aperol (0.5 oz)
– 60 ml ruby red grapefruit juice (2 oz)
– 15 ml of lime juice (0.5 oz)
– 15 ml of agave syrup (0.5 oz)
– Carbonated water
– 30 ml of coconut milk (1 oz)
